These Ferrero Rocher blossom cookies are a twist on classic blossom cookies that usually have Hershey's kisses on top. This hazelnut version is just as easy to make but with a crunchier texture thanks to the hazelnuts.

- Salt
- Unsalted butter - This should be softened to room temperature to make it easier to mix.
- Brown sugar
- Egg - This should also be at room temperature to prevent the batter from curdling.
- Vanilla extract
- Granulated sugar - You can choose to coat these cookies with just sugar, just crushed hazelnuts, or both! Sugar gives a classic, sparkly blossom cookie look.
- Hazelnuts - Finely crush the hazelnuts by placing them in a ziplock bag and whacking them with a rolling pin. You can also chop them with a knife.
- Ferrero Rocher chocolates - The classic hazelnut chocolates that come out around the holidays! These are common gifts so these are great cookies to make after the holidays too with leftover chocolates.
Tips for making the best ferrero rocher blossom cookies
- Use a small cookie scoop. These cookies are meant to be bite-sized (well, two bites!) so you want the cookies to be just a bit bigger than the Ferrero Rocher chocolates.
- Add the ferrero rocher toppers immediately after taking the cookies out of the oven. The heat from the cookies will melt the chocolate and help seal them to the cookies. This is when the cookies are the softest. This means you'll need to unwrap all the chocolates before the cookies are finished baking so that you'll be ready to go once they come out.

These ferrero rocher blossom cookies can stored in an airtight container at room temperature for up to 3 days.
They can be frozen in an airtight container or freezer bag for up to 1 month. Thaw at room temperature before eating.

Baking by weight is much more accurate than volume. When using US standard cups, ingredients like flour and sugar can easily be overpacked into the cup causing you to add too much of certain ingredients. Chocolate Cookies
- 150 g all-purpose flour
- 50 g natural cocoa powder
- ยฝ teaspoon baking powder
- ยฝ teaspoon baking soda
- ยฝ teaspoon salt
- 115 g unsalted butter, softened to room temperature
- 100 g brown sugar
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
For rolling
- 50 g granulated sugar
- 100 g hazelnuts, finely crushed/chopped
For topping
- 24 Ferrero Rocher chocolates
Instructions
- Prep: Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
- Flour mixture: In a small bowl, stir together flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
- Butter mixture: In a large mixing bowl, use an electric hand mixer to beat the softened butter until it becomes very creamy. Add the brown sugar and beat until fluffy. Add the egg and vanilla extract and beat again until combined.
- Combine flour and butter mixtures: Add the flour mixture to the butter mixture and mix on low speed until just combined.
- Scoop dough: Use a 1.5-tablespoon cookie scooper to scoop the cookie dough into your hand.
- Roll cookies: Roll the cookie dough ball in between your hands and then roll it in either granulated sugar or crushed hazelnuts until coated. Place the rolled cookie dough balls on your lined baking sheet, leaving about 1" in between each cookie for spreading.
- Bake: Bake cookies for about 7-8 minutes. While the cookies are baking, unwrap all the Ferrero Rocher chocolates. After taking the cookies out of the oven, immediately press a Ferrero Rocher on top of each cookie. Let the cookies cool completely or enjoy while warm.
