Choux Pastries
Oh, the delicate choux pastries. I'm convinced choux is a little bit magical in the way that it goes from nothing more than a blob of perfectly prepared batter to a tall, puffy, hollow pastry that can be then filled with creams and custards. These take a bit of work to arrive at the correct consistency to ensure that big, beautiful puff but like all things, they pay off in the end.
The possibilities are endless with choux pastries once you have perfected the basic choux recipe and can be made into cream puffs, éclairs, chouquettes, gougères, and more.
