Beat egg whites while adding sugar 1 tablespoon at a time until it becomes stiff peaks. Add gel food colouring.
Fold in almond flour mixture a half at a time until roughly combined.
Continue folding and smearing the batter around the sides of the bowl and scooping it together again.
It's at the right consistency when it slowly ribbons off the spatula.
Pipe batter onto baking sheet in small rounds. Rest at room temperature for 1 hour. Bake at 290°F for about 15 mins.
Beat cream cheese, powdered sugar, and vanilla extract until smooth.
Pipe cream cheese filling around the edges of a macaron and fill the middle with strawberry jam.
Sandwich the filling with another macaron shell. Drizzle with melted white chocolate and sprinkle with crushed graham crackers.
