matcha cookie dough
white chocolate chunks
Stir together glutinous rice flour, sugar, and water.
Microwave for 1 min, stir, 30 seconds, stir, and another 30 seconds until it becomes a sticky mochi.
Dust with cornstarch and cut into small pieces. Let cool completely before adding to cookies.
Cream the butter, sugar, egg, and vanilla extract.
Fold in the flour mixture and chopped white chocolate.
Scoop out balls of cookie dough and chill for 1 hour until firm.
Press a depression into the dough and mold it back together around a piece of mochi.
Bake cookies at 350F for 12-14 minutes.
Enjoy your matcha mochi cookies within 1-2 days!
